The Perfect Brine
A good pickle starts with a good brine. Our classic recipe uses a simple ratio: for every liter of water, add 2 tablespoons of salt, 1 tablespoon of sugar, and a generous splash of white wine vinegar.
Fresh Dill is Key
Don't skimp on the dill. Use the whole plant – fronds, stems, and even the flowers if you have them. The stems add a subtle anise note that you won't get from fronds alone.
The Waiting Game
Patience is a virtue in pickling. Quick pickles are ready in 24 hours, but for the best flavor, wait at least a week. The flavors need time to marry and mellow.
